NASTURTIUM MAYO – the secret ingredient for the ultimate steak sandwich, by Michael Thompson, Head Chef at fodder pop-up. 

Beef and nasturtium is such a great combination - earthy and peppery, the nasturtium in the mayo lifts the richness of the beef.

Here’s how to make a jar’s worth:
1 egg yolk
1 tbsp white wine vinegar
400-500ml sunflower oil
5g nasturtium leaves Pinch of sea salt

Mix the egg yolk and vinegar together in a bowl. Gradually pour in a gentle stream of sunflower oil, whisking constantly until everything is incorporated and smooth. Then finely chop the nasturtium leaves and stir through, before seasoning with salt. Perfect.
